Slow Cooker Honey Garlic Chicken



Slow Cooker Honey Garlic Chicken is the perfect weeknight meal with just five ingredients. Full of flavor and easy to make with pantry ingredients and almost no prep!

INGREDIENTS
  • 2 tablespoons lite soy sauce
  • 2 tablespoons ketchup
  • 2 tablespoons honey
  • 3 cloves garlic , minced
  • 6 chicken thighs , bone in skin on
INSTRUCTIONS
  1. Combine all the ingredients together in the slow cooker until well mixed.
  2. Lay the chicken skin side up in a single layer and cook on low for 6-7 hours.

Classic Slow Cooker Pot Roast Recipe


No matter the temperature outside, this classic crock pot roast is exactly what your belly is craving. It’s a healthy, homemade meal that comes together quickly and cooks while you’re away. Come home and dinner is done!

It’s early, but we have a very busy season ahead of us… birthday, hosting company, hosting family, end of school activities, one vacation, birthday, anniversary, more company, another birthday, a blogging trip, more company and then school starts.

INGREDIENTS
  • 1 chuck roast (3-4 lbs)
  • 1 lb baby carrots (or carrots, cut to about 1" pieces)
  • 1½ lbs potatoes (any variety, cut into about 1" pieces if necessary)
  • 4 Tbsp homemade dry onion soup mix
  • 1 batch homemade cream of mushroom soup
INSTRUCTIONS
  1. Place half the potatoes and carrots on the bottom of the slow cooker.
  2. Next, place the chuck roast on top of the vegetables
  3. Place remaining vegetables on top and around the chuck roast.

Seasoned Chicken, Potatoes and Green beans



An easy one pot slow cooker recipe.!

INGREDIENTS
  • 1.5- 2lbs Boneless Skinless Chicken Breasts
  • ½ lb. fresh green beans, trimmed (about 2.5 cups)
  • 1.25 lb. diced red potatoes (about 4 cups)
  • ⅓ cup FRESH lemon juice
  • ¼ cup olive oil
  • 1 tsp. dried oregano
  • 1 tsp. salt
  • ¼ tsp. pepper
  • ¼ tsp. onion powder
  • 2 garlic cloves, minced
INSTRUCTIONS
  1. Start by placing the chicken in a 6-quart slow cooker, in the center. Next add the green beans on one side. Then for the potatoes, you will need to mound them high off to the other side.
  2. In a medium sized bowl, whisk together the lemon juice, olive oil, oregano, salt, pepper, onion powder and garlic cloves.

Slow Cooker Coconut Quinoa Curry



The best quinoa curry recipe! This healthy slow cooker coconut curry is one of the easiest meals ever. Just toss everything into the slow cooker and done!

I will say, this curry is kind of a middle-of-the-road type curry. Not that it tastes basic or anything, but the flavor profiles don't swing in any cuisine's direction. I almost feel like it has some influences from all over the place and yet it totally works.

We start with sweet potato, broccoli, onion and chickpeas as the bulk of the curry. You could feel free to swap in any other veggies you want – white potatoes, butternut squash, cauliflower, eggplant, etc. – just as long as the proportions stay the same, you should be all set.

From there the sauce of the curry is just diced tomatoes and coconut milk. The tomatoes add a nice level of sweetness while the coconut milk makes it thick and creamy. Plus…super simple.

INGREDIENTS
  • 1 medium sweet potato peeled + chopped (about 3 cups)
  • 1 large broccoli crown cut into florets (about 2 cups)
  • 1/2 white onion diced (about 1 cup)
  • 1 15 oz can organic chickpeas, drained and rinsed
  • 1 28 oz can diced tomatoes
  • 2 14.5 oz cans coconut milk (either full fat or lite)
  • 1/4 cup quinoa
  • 2 garlic cloves minced (about 1 tablespoon)
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon freshly grated turmeric or 1 teaspoon ground
  • 2 teaspoon wheat free tamari sauce
  • 1 teaspoon miso or additional tamari
  • 1/2 - 1 teaspoon chili flakes
INSTRUCTION
  1. Add all ingredients to a slow cooker, starting with 1 cup of water. Stir until everything is fully incorporated.
