Cheesy Protein Pasta



This healthy cheesy protein pasta is vegan and gluten free. One serving contains 41 grams of protein, and this recipe serves two. It’s also high in calcium from the sesame seeds and beans. As nutritional yeast contains all nine essential ammo acids, it provides complete plant protein.

The creamy, velvety cheese sauce is also nut free, oil free and grain free. Try this quick and easy vegan cheesy protein pasta today.

INGREDIENTS
  • 1 can White beans, 15oz/400g
  • 2½ cups / 160g Bean / Lentil Pasta
  • 4 tbsp Nutritional yeast
  • ½ cup / 120ml Water
  • 1 Garlic clove
  • 2 tbsp Sesame seeds
  • ¼ tsp Turmeric
  • 1 tbsp Apple cider vinegar
  • ½ tsp Smoked Paprika
  • ½ tsp Chopped Basil
  • pinch of Salt and Pepper
METHOD
  1. Drain the beans and place everything apart from the pasta into a blender and whizz until combined.
  2. Cook the pasta as per instructions and drain.
  3. Stir in the cheesy bean pasta sauce.

Creamy Spicy Sun Dried Tomato Pasta



Pasta is one of my absolute favourite things to eat, and when I made this one, I knew I had to share.

It’s pretty much making a quick white sauce, then blending it with sun dried tomatoes which brings a burst a flavour! Adding chilli flakes gives it some heat, so you add up with a very tasty creamy and spicy sun dried tomato sauce.

INGREDIENTS
  • 250g uncooked penne pasta
  • 1 tbsp + 1/2 tsp extra virgin olive oil
  • 4 to 5 garlic gloves, minced (2 tbsp)
  • 1 1/2 tbsp cornflour*
  • 2 cups unsweetened almond milk
  • 1/2 tsp salt + pepper to taste
  • 1/2 + 1/4 cup sun dried tomatoes (jarred in oil, with garlic and herbs included), drained from any oil
  • 1 tbsp nutritional yeast
  • 1 onion, diced
  • 1 tsp chilli flakes, or to taste
  • 1/2 tsp dried oregano
  • 2 to 3 big handfuls of rocket or baby spinach
INSTRUCTIONS
  1. Cook your pasta according to the package instructions, but leave the pasta just slightly undercooked. Set aside.
  2. Add 1 tbsp olive oil into a large frying pan over medium to high heat. When hot, add garlic and cook for 2 minutes or until lightly browned. Mix in cornflour and cook for a further minute. Add 1/2 tsp of salt and 1 cup of almond milk, making sure that the mixture is smooth besides the garlic. When it has thickened, add the remaining cup of almond milk. When it has thickened slightly (it will thicken further when blended), pour this into a blender.
  3. Add 1/2 cup sun dried tomatoes, nutritional yeast and 1/3 cup water to the blender and blend until smooth. Set aside.

Bacon Au Gratin Spaghetti Squash



Oh my goodness you guys. If you’re on the keto diet or a low carb diet you probably love spaghetti squash! But there’s only so much alfredo and spaghetti sauce to pour on it. Try this bacon au gratin spaghetti squash recipe! It goes perfect as a side with your steak or as the main dish! Delish.

INGREDIENTS
  • 1 medium spaghetti squash
  • pinch of salt
  • pinch of black pepper
  • 2 tablespoons of olive oil
  • 1 tablespoon of minced onion powder
  • 1 teaspoon of garlic powder
  • 1 tablespoon of Italian seasoning
  • 3 ⁄4 cup of plain Greek yogurt
  • 1 ⁄2 cup of cheddar cheese
  • 1 ⁄2 cup of mozzarella cheese
  • 1 ⁄4 cup of Parmesan cheese plus more for topping
  • 4 slices of cooked bacon roughly chopped
  • parsley for garnish if desired
INSTRUCTION
  1. Preheat oven to 375 degrees Fahrenheit.
  2. Poke holes all over squash with a fork. Put squash into the oven for 4-6 minutes, or until slightly softened. (In five minute intervals.)
  3. Cut squash in half lengthwise. With a spoon, scoop out seeds and discard it.
  4. Drizzle olive oil over both halves of the squash and rub it all over (including the skin). Sprinkle squash with salt and pepper.

Quick & Easy Basil Avocado Pasta


This Basil Avocado Pasta has been my go to lunch recently. It’s so yummy and creamy. Plus it only takes 15 minutes in total to throw together.

Filling but not heavy and so satisfying! Bursting with flavour from the basil, lemon and garlic. Plus this Basil Avocado pasta sauce recipe is gluten free, dairy free, vegan and full of so much goodness.

Ingredients : Basil Avocado Pasta Recipe Vegan + Gluten free
  • 2 Garlic Cloves
  • juice of half a lemon
  • 300g Gluten free pasta
  • 2 Avocados halved, seeded and peeled
  • 1/3 cup Olive Oil
  • handful of basil leaves
  • pinch of pink salt
  • black pepper to taste
  • 1 tsp chilli flakes
Method
  1. In a large pot of boiling water cook pasta and drain well.
  2. Place the avocado, garlic, basil, olive oil, lemon juice into a blender or food processor and blend until your desired consistency. Tastes great both chunky or smooth and creamy.

One Pot Chicken Parmesan Pasta



All the great chicken parmesan flavors, combined in one easy one pot pasta dish that's ready in 30 minutes! Less dishes, but a meal with maximum flavor!

INGREDIENTS
  • 2-3 boneless skinless chicken breasts, diced into bite sized pieces
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1 medium yellow onion, minced
  • 3 cloves garlic, minced
  • 16 oz dried short-cut pasta (I used rigatoni)
  • 24 oz jar of your favorite marinara sauce (I used Newman's Own)
  • water to fill empty marinara sauce jar
  • 1 cup mozzarella cheese
  • 1/2 cup parmesan cheese
  • salt and pepper, to taste
  • additional dried Italian seasoning, optional
  • fresh parsley and/or basil, minced for garnish
INSTRUCTIONS
  1. To a large pot or skillet (I used my dutch oven), add a drizzle of olive oil and heat over MED-HIGH heat.  Add chicken, season with salt, pepper, Italian seasoning and garlic powder.  Cook about 5 minutes, until chicken is most of the way cooked through.  Remove to a plate.
  2. Add onion and garlic to the pot and cook about 2-3 minutes, until soft.  Pour in marinara sauce, fill up empty sauce jar with water and add to the pot.  Bring to a boil, then reduce to a strong simmer.

Creamy Beef Pasta



An easy, creamy beef pasta recipe that is loaded with flavor and cheese!

This pasta dish is a creamy, cheesy tomato sauce, with ground beef and rotini! You can add a little more crushed red pepper to make it a little spicier, or leave it out all together. You can even substitute a jar of pre-made pasta sauce instead of the plain tomato sauce and the seasonings if you have a jarred sauce you really love!

Ingredients
  • 2 tablespoons olive oil
  • 1 small yellow onion, diced (about a cup)
  • 2 pounds lean ground beef
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 teaspoons kosher salt
  • 1/2 teaspoon crushed red pepper
  • 1/4 cup flour
  • 1 (28- ounce) can tomato sauce
  • 1 cup beef broth
  • 1 pound Rotini pasta
  • 1 cup heavy cream
  • 2 cups grated sharp cheddar cheese
  • optional – garnish with parsley (fresh or dried)
Instructions
  1. In a large, deep skillet heat the olive oil over medium heat. When the oil is hot, add in the diced onions and sauté for 5-6 minutes, until they begin to soften. Add in the ground beef to the skillet and break the meat apart. Cook until no pink remains. Drain excess grease and return the to heat.
  2. With the heat still on medium, add in the garlic, basil, oregano, salt, red pepper, and flour. Cook for 1 minute, stirring constantly to coat.
  3. Add in the tomato sauce and broth and stir to combine. Bring to a boil and simmer for 15 minutes.
