Keto Lasagna Bowls – BEST Low Carb Lasagna Recipe {Easy 5 Ingredient Meal} No Noddle Lasagna



It’s here – the BEST keto lasagna recipe! Super easy low carb meat lasagna. Yummy and delicious keto lasagna no noodles – you got it NO noodles. With 5 ingredients you can have a quick and easy weeknight dinner that the whole family will love. The ramekins make it a super meal to clean up – you could also use mugs too! I love this low carb recipe with marinara sauce, cheese and meat. These make great meals for the week as you can prep ahead of time or they would also make great party food too. INGREDIENTS
  • 1 jar marinara
  • 15 ounce package ricotta
  • ½ pound Italian sausage
  • 4 thick slices of mozzarella
  • 2 tablespoons parmesan, shredded
  • Optional 1 tablespoon fresh parsley + more for garnish
INSTRUCTION
  1. In skillet, brown sausage.
  2. Once the sausage is cooked add the marinara to the skillet.
  3. In a bowl, mix Parmesan and ricotta together.
  4. On a baking sheet place 4 ramekins.

Keto Blueberry Cheesecake



INGREDIENTS
  • 200g skinless hazelnuts
  • 75g butter
  • For the cheesecake:
  • 300ml full-fat sour cream
  • 600g full-fat cream cheese
  • 2 tbsp powdered sweetener - (erythritol)
  • 3 large eggs
  • 6 large egg yolks
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 400g blueberries
  • 1 tsp powdered sweetener - (erythritol)
  • 1 tbsp lemon juice
STEPS
  1. Pre-heat the oven to 180C. Place the hazelnuts on a baking tray and place into the oven. Bake for 8-10 minutes, until the hazelnuts smell toasted and are golden. Add to a food processor and blitz until a fine crumb is formed—be careful not to over blitz. 
  2. Melt the butter over a medium heat until slightly brown and nutty smelling then tip into the food processor and pulse to combine.

Baked Lemon Pepper Wings



The lemon pepper chicken wings are seasoned with homemade lemon pepper seasoning and baked in the oven.

INGREDIENTS
  1. 4 lbs Chicken wings, tips removed and patted dry
  2. 4-5 Large lemons, zested
  3. 3 tbsp Extra virgin olive oil
  4. 1 tbsp Salt
  5. 1 tsp Black peppercorns, crushed
INSTRUCTION
  1. Position oven rack to center position and preheat oven to warm (lowest setting).  Line a large rimmed baking sheet with parchment paper and set aside.
  2. To prepare the lemon-pepper seasoning, wash the lemons and pat dry. Remove zest from each lemon with a citrus zester.  A good zester will remove all the yellow and none of the bitter white layer.  Spread the zest in a thin layer on the parchment paper and place in the oven. After 20 minutes, remove pan from oven and shake to make sure zest is drying evenly. Return to oven until thoroughly dried, approximately 25-30 minutes.  Remove dried lemon zest from the oven and increase oven temperature to 425°F.

Keto Cheesecake – Just 5 Ingredients!



The best and easiest low carb and keto cheesecake – even people who aren’t on a keto diet LOVE this unbelievably creamy cheesecake!

Total Time: 30m Yield: 10-12 slices 

INGREDIENTS
  • 24 oz cream cheese or vegan cream cheese
  • 2 cups yogurt, such as coconutmilk yogurt
  • 2 1/2 tsp pure vanilla extract
  • 1 tbsp lemon juice, optional
  • 2/3 cup erythritol (sugar or maple syrup also work for non-keto)
  • 1/4 cup almond flour
INSTRUCTION
Feel free to use a store-bought crust or make this crustless, or here is the crust I used: 3 cups almond or pecan flour (you can pulse nuts in a food processor to make flour), 1/2 tsp salt, optional 2 tbsp coconut oil. Combine all ingredients, pour into a lined 8 or 9-inch springform, press down evenly, then set aside while you make the filing.

This Easy Lemon Berry Keto Cream Cheese Dessert is one of my favorite “fluff” recipes of all time. This light recipe is so easy to make, and it tastes incredible with the sweet berry flavors combined with tangy lemon. 

This Lemon Berry keto cream cheese dessert (aka “fluff”) is now my absolute favorite treat. I add pecans and unsweetened coconut to mine and let me tell you; it is glorious!

It is so easy to whip up in just a few minutes. You can eat it right away. However, I feel like it is much better after being refrigerated overnight so that all of the flavors can merge.

Ingredients
  • 1 1/2 cup heavy whipping cream
  • 8 oz cream cheese softened
  • 2/3 cup MonkFruit Powdered (you can add more or less to your preference)
  • 1/4 cup diced fresh strawberries
  • 1/4 cup fresh blueberries
  • 3 tsp lemon zest
  • 1/2 tsp pure vanilla extract
Instructions
  1. In a medium-sized bowl, mix the heavy whipping cream with a mixer on medium-high until it has doubled in size and begins to form large peaks.
  2. In a separate bowl add softened cream cheese, Monkfruit powdered, strawberries, blueberries, lemon zest, and vanilla and mix until it is smooth and the ingredients are combined.
  3. Combine the two mixtures in one bowl and beat until they are thoroughly combined and smooth.

Simple Low Carb Meals



The most important thing is that you stock your refrigerator well. Unfortunately, there aren’t a lot of carb-friendly meals that you can buy premade. So you won’t need as many canned goods or boxes, because you’ll be buying fresh ingredients such as veggies, meats, some dairy and berries to start.

Cutting your veggies ahead of time helps tremendously with meal prep and snacking. Our favorite veggies to keep on hand are cauliflower, broccoli, carrots, bell peppers and different types of lettuce. Cabbage is great for making slaw or adding some additional crunch to your salads.

The most important thing for me when on a low carb diet is to have plenty of variety in my menu. If I eat the same foods week after week (which my husband doesn’t mind, actually), I get bored, and it’s easy for me to fall off the wagon. Cooking and experimenting with different recipes helps keep me interested, and it’s good for your body to get a lot of different nutrients, too.
