Smothered Green Beans



These Smothered Green Beans are ridiculous! OMG! SO good!! Green beans smothered with bacon, brown sugar, butter, soy sauce and garlic. How could they not be good? The best part is that this casserole only takes a few minutes to put together. You can actually cook the bacon ahead of time and this would be ready in about a minute! Woohoo!

This makes a TON! We ate leftovers for several days and they tasted great! This would be the perfect dish for a potluck or dinner party. I promise everyone will go crazy over these Smothered Green Bans! SO easy and SO delicious!

INGREDIENTS:
  • 5 (15-oz) cans green beans, drained
  • 1 lb bacon
  • 2/3 cup brown sugar
  • 1/4 cup butter, melted
  • 1/4 cup low-sodium soy sauce
  • 1-1/2 tsp garlic powder
INSTRUCTIONS:
  1. Preheat oven to 350 degrees.
  2. Pour drained green beans in an ungreased 9x13-inch pan.

Chicken Parm Bites



Under 30 min
INGREDIENTS
  • for 2 servings
  • 1 lb  chicken tender (455 g)
  • 1 ball mozzarella cheese
  • 2 cups  panko breadcrumbs (100 g)
  • 1 tablespoon  garlic powder
  • 1 tablespoon  dried basil
  • 1 tablespoon  dried parsley
  • 1 tablespoon  salt
  • ½ cup  flour (65 g)
  • 2 eggs
  • oil, to fry
  • 1 cup  marinara sauce (255 g)
PREPARATION
  1. Cut the chicken tenders into 1.5-inch (4 cm) pieces.
  2. Take a knife and carefully cut a hole into the chicken tenders. Make sure to not cut all the way to the other side.
  3. Stuff the holes with mozzarella cheese.
  4. Add garlic powder, dried basil, dried parsley, and salt to the panko bread crumbs.

Creamy Grilled Chicken Piccata - grilled lemon herb chicken over a creamy piccata sauce. SO good! Better than any restaurant! We make this at least once a month!

INGREDIENTS:
Chicken

  • Juice of 1 lemon (3 Tbsp)
  • 3 Tbsp olive oil
  • 1 Tbsp minced garlic
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp basil or oregano
  • 2 boneless, skinless chicken breasts
Pasta
  • 2 cups dried penne pasta
  • 2 Tbsp butter
  • Juice of 2 lemons (6 Tbsp)
  • 1 Tbsp minced garlic
  • 1/2 cup half and half (or heavy cream)
  • 2 tsp dried basil
  • 2 Tbps capers
  • 1/2 cup grated parmesan cheese
INSTRUCTIONS:
Chicken
  1. Combine first 6 ingredients and mix well.  Place chicken in a ziplock bag and pour marinade over chicken.  Marinate overnight in the refrigerator.  When ready, grill until done.  Allow chicken to rest for a few minutes and then slice into strips to serve over pasta.

INGREDIENTS
  • 1 1/2 pounds flank steak thinly sliced against the grain
  • 1/4 cup cornstarch
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon minced garlic

Oven Baked Chinese BBQ Pork



This Chinese BBQ Pork is deliciously sticky with a sweet and salty flavor!

INGREDIENTS
  • 3 lb boneless pork shoulder or butt
  • 1/4 cup Hoisin sauce
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 3 tablespoon soy sauce
  • 1/4 cup dry sherry
  • 2 tablespoons oyster sauce
  • 1 teaspoon Chinese five spice
  • 4 garlic cloves minced
  • 2 teaspoons red food coloring optional
  • 1 teaspoon cornstarch
INSTRUCTION
  1. In a small bowl combine brown sugar, honey, soy sauce, dry sherry, oyster sauce, five spice, garlic and red food coloring (optional)  and mix until combined.
  2. Cut pork horizontally into three long flat pieces. Place in a container or ziplock bag, pour marinade over pork. Marinade 24-48 hours for optimal flavor.
  3. Preheat oven to 350 degrees. Cover a baking sheet with foil and place a cooling rack on top. Place pork on the rack. Bake for 25 minutes. Flip the pork and cook another 25 minutes.

These Easy Peasy Chicken Bacon Bites are the perfect appetizer for any party! Made with just two main ingredients, they're easy and fabulous! 

If you are on the Whole30, make sure you use compliant bacon - no sugar added! It's actually pretty easy to find and worth the effort - bacon is just SO GOOD!

INGREDIENTS
  • 1 lb boneless, skinless, chicken breasts or chicken tenders
  • 1 lb bacon
  • salt and pepper to taste (can also season with garlic powder, onion powder, paprika, etc.)
INSTRUCTION
  1. Preheat oven to 350F.
  2. Cut chicken into bite-size pieces.
  3. Line a broiler pan or baking sheet with foil and spray with non-stick cooking spray. (If using non-stick foil, there's no need for the cooking spray.)
  4. Cut the strips of bacon into thirds. Working in batches, wrap each piece of chicken with the bacon.
  5. Place seam side down on the prepared broiler pan or baking sheet.

16 Magical Ways to Use Your Instant Pot



Our love affair with the Instant Pot runs so long and deep, it’s moved up to #1 in our hearts (psssst: don’t tell our slow cooker). We’re not usually big on kitchen gadgets, but does anyone else have a cabinet full of abandoned gimmicky gadgets that lost their luster after just a use or two? Looking at you, avocado slicer.

Confession: the Instant Pot is a totally different story. This little beauty basically lives on our countertop at this point. We just use it ALL THE TIME. Every week, multiple times a week, sometimes every day. The Instant Pot and us have been through a lot and the more we use it, the more attached we become.

FIRST THINGS FIRST – WHAT IS AN INSTANT POT?

Broccoli Stir Fry Recipe



This Garlic Broccoli Stir Fry Recipe is a super quick 10 minute dinner that’s light, fresh and veggie packed.
Truthfully, when I whipped up this broccoli stir fry I was going for a Broccoli in garlic sauce kind of dish that could replicate one of my go-to takeout orders.

While it missed the mark on being an exact copycat recipe, this broccoli stir fry certainly packs a garlicky kick, and combined with the freshness of the veggies, this stir fry is a winner for me. The hint of lime at the end really perks up all of the flavors in this stir fry.

This Garlic Broccoli Stir Fry Recipe is a super quick 10 minute dinner that's light, fresh and veggie packed.

I served this with rice and since the rice was already made ahead of time, this was such a quick and easy meal. I use my rice cooker to make all of our rice and I love it because it’s so quick, easy and un-screw-up-able.

To make this even quicker of a meal, I took a shortcut and used a 12 oz. bag of fresh steamable broccoli in the produce aisle (not frozen).

How to Customize this Broccoli Stir Fry Recipe
  • Substitute the peppers. Use red, yellow or orange bell pepper interchangeably. Green bell pepper can be used, but the others tend to be sweeter and better suited for this dish.
  • Add Baked Tofu. This stir fry is pretty light, so adding in some baked tofu would add a little heartiness. Just add in the baked tofu towards the end just after adding in the sauce.
  • Serve over rice noodles. I do think you’d need to double the sauce (note – I haven’t tried this myself and will update the post after I do!) so that the noodles would have plenty of sauce to soak into them, but this meal would be fantastic over rice noodles or lo mein noodles.

  • 1/2 Red Onion thinly sliced
  • 1 Orange Bell Pepper thinly sliced
  • 12 oz Broccoli Florets Fresh (I used bagged, fresh from produce section)
  • Salt and Pepper to taste
  • 1 cup Sugar Snap Peas
  • 1 Green Onion chopped
  • 1 tbsp. Sesame Seeds
  • Juice of half a lime
Sauce:
  • 5 Garlic Cloves minced
  • 2 tsp. Sesame Oil
  • 1/4 Cup Soy Sauce low Sodium
  • 1/2 cup Vegetable Broth
  • 2 tsp. Maple Syrup
  • Salt and Pepper to taste
  • 2 tsp. Corn Starch
INSTRUCTION
  1. In a medium bowl, whisk garlic, sesame oil, soy sauce, vegetable broth, maple syrup and corn starch. Mix well. Set aside.
  2. Add vegetable oil to a pan over medium high heat. Add red onion, bell pepper and broccoli florets. Season with salt and pepper. Saute for about 6 to 8 minutes.

How to Cook Perfect Pan Seared Salmon
  1. First heat a large non-stick skillets over medium-high heat (or use two skillets if you used large fillets like I did so they aren’t overcrowded).
  2. Add 1 1/2 tsp olive oil to each skillet or 1 Tbsp to 1 skillet. Dab both sides of salmon dry with paper towels and season both sides with salt and pepper.
  3. Place salmon in skillet (top turned down).

Chicken Broccoli Rice Casserole | Easy, Cheesy, and Healthy



Chicken Broccoli Rice Casserole is one of the oldest, best-loved recipes on my site. As the comments section will attest, this healthy, cheesy, and easy dinner recipe has received rave reviews from picky husbands, fussy toddlers, and new moms in search of freezer meals. The flavors are simple and appealing, the recipe prep is easy, and unlike many other casserole recipes, this chicken broccoli rice casserole contains NO SOUP!

Casseroles like Chicken Broccoli Rice Casserole were a fixture at our table growing up. My mom was the casserole QUEEN. She wore a crown of Pyrex and carried a scepter of nonstick baking spray.

Those last two things are a fib, but she really did rock the 9×13 pan. Not only could she make a casserole from scratch, but she could transform any (and I mean any) leftover in our home into a creamy, cheesy casserole of sorts.

No Soup Added Chicken Broccoli Rice Casserole
I think part of the reason the word casserole can make a girl run and hide her fork is that stereotypical casseroles are used to disguise, rather than celebrate, their ingredients. Tuna Surprise, I am looking at you.
Although casserole condemnations do have some foundation in reality (many of the casserole recipes in the universe are indeed overly heavy, bland, and laden with cream of XYZ soup), when made properly, casseroles can also be an excellent, healthy choices for dinner.



INGREDIENTS

  • 1 3/4 cups low-sodium chicken stock
  • 2 cups instant brown rice — if you use white rice or non-instant rice, the cooking time and amount of liquid needed may differ
  • 1 pound broccoli florets — chopped into bite-sized pieces
  • 1 teaspoon extra-virgin olive oil
  • 1 pound boneless skinless chicken breasts — chopped into bite-size pieces
  • 3/4 teaspoon kosher salt — divided
  • 3/4 teaspoon garlic powder — divided
  • 1/2 teaspoon black pepper — divided
  • 2 tablespoons all-purpose flour
  • 2 cups milk — divided (I used skim)
  • 3 tablespoons Dijon mustard
  • 1/3 cup nonfat plain Greek yogurt
  • 1 1/2 cups reduced-fat shredded cheddar cheese — divided (about 6 ounces)
INSTRUCTION
  1. Place a rack in center of oven and preheat oven to 375 degrees F. Lightly grease a deep 9-inch-square baking dish or a 3-quart casserole dish.
  2. Bring the chicken stock to a boil in a large pot, then add the rice. Return to a boil, add the broccoli to the top of the rice (no need to stir it together), then cover, reduce the heat to low, and let cook 5 minutes. Remove the pot from heat and let sit, covered, for an additional 5 minutes. Most of the rice liquid should be absorbed.
  3. Meanwhile, heat the olive oil in a Dutch oven or other large deep pot over medium-high. Add the chicken, 1/2 teaspoon salt, 1/2 teaspoon garlic powder, and 1/4 teaspoon black pepper. Sauté until cooked through and no longer pink in the center, about 4 to 6 minutes, then remove to a plate. Being careful not to burn yourself, wipe the pot clean with a paper towel.

  • 1 large sweet potato (about 12 ounces) diced into 1" pieces
  • 1 tsp sea or kosher salt
  • 1 lb flat iron steak diced into 1" pieces
  • 3 tbsp olive oil divided
  • 2 cloves garlic minced
  • 2 bell peppers seeded and diced into 1" pieces
  • 4 green onions thinly sliced
  • 2 tbsp coconut aminos
  • 2 tsp cracked black pepper

INSTRUCTION
  1. Place the diced sweet potatoes into a microwave safe bowl, then sprinkle with 1 teaspoon salt. Cover with a plate and microwave on high until just barely tender, 4-6 minutes. Stir once halfway through. The potatoes are ready when you can piece one with the tip of a knife and meet just a bit of resistance. Take care not to overcook at this stage or they'll turn out mushy later.
  2. Heat a 12” skillet over high heat. Add 2 tablespoons olive oil and heat until shimmering. Add the steak in a single layer. Cook, turning every two minutes, until the pieces are browned and the center is medium, about 10 minutes. Remove the steak from the skillet using a slotted spoon and set aside onto a plate. 
  3. Add the third tablespoon olive oil to the skillet. Add the sweet potatoes, toss to coat in the fat and cook until browned, stirring occasionally, until browned, 3-4 minutes.

  • 1 tsp black pepper
  • 2 cloves of garlic

INSTRUCTION
  1. Add beef and all liquid/seasoning ingredients to the crock pot and set on high.
  2. If you prefer to slice the beef, cook 3-4 hours, then remove beef from crock pot while still slightly firm and slice very thinly.
  3. If you prefer shredded beef (easier), cook for 5 hours and shred with forks when tender, removing chunks of fat.
