BEST Punch Recipe



The BEST Punch Recipe for Any Party: Made with Sprite (or lemon-lime soda), pineapple juice, kool-aid, sugar, and water!  So easy, and the best fruit punch ever! 

INGREDIENTS
  • 1 package each Kool-Aid mix: Orange, Lemon, Cherry and Strawberry (the small packets that makes 2 quarts)
  • 1 Gallon water
  • 3.5 cups sugar super fine if possible, but not necessary
  • 1 46 oz. can pineapple juice
  • 1 2 liter bottle lemon-lime soda
INSTRUCTION
  1. Mix together all ingredients EXCEPT lemon-lime soda.
  2. Right before serving, add in the lemon-lime soda
  3. Serve chilled or over ice.

Follow these simple steps and recipe on how to make the best scrambled eggs, which result in pillow-y, creamy, flavorful eggs every time!

INGREDIENTS
  • 4 large eggs
  • 1/4 cup half-n-half
  • 1/4 teaspoon Kosher salt
  • 1 tablespoon unsalted butter
  • black pepper, for serving
  • fresh chopped herbs, for serving
DIRECTION
  1. In a medium mixing bowl, aggressively whisk together the eggs, half-n-half, and salt until the mixture is uniform in color and texture, and is light and foamy, without any separate streaks of yolk or whites.
  2. Melt the butter in a small nonstick pan over medium heat, until the butter coats the whole pan and just starts to foam.
  3. Add the eggs to the center of the pan and immediately reduce the heat to medium-low.
  4. Wait for the edges to just barely start to set, then using a rubber spatula, gently push the eggs from one end of the pan to the other. Continue this process, pausing in between swipes to allow the uncooked egg to settle on the warm pan and cook, gently pushing the liquid to form the curds.

Rooasted Asian Glazed Chicken Thighs



Chicken so full of flavour, yet so simple, that these need NO marinading. Who has time to marinade anyway? Especially when you come home in a manic rush and starving to the point of raiding anything that looks good in the pantry.

INGREDIENTS
  • 6 chicken thighs ((bone in and skin on))
  • 1/3 cup rice wine vinegar
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons brown sugar ((or coconut sugar))
  • 2 tablespoons pure sesame oil
  • 4 cloves garlic (, crushed)
  • 1 teaspoon crushed ginger ((fresh))
  • 2 bunches of baby bok choy ((quartered horizontally))
  • sliced green onions/shallots
INSTRUCTION
  1. Preheat oven to 220°C | 425°F
  2. Wash chicken thighs and pat dry with a paper towel.
  3. Whisk the vinegar, soy sauce, honey, brown sugar, sesame oil, garlic and ginger together in a small saucepan over medium heat. Bring to a rolling boil; reduce heat to low and allow to simmer for about 5 minutes while stirring occasionally until sauce thickens.

Clean Eating Pineapple Dole Whip



If you have ever been to a Disney theme park, it is likely that you are well acquainted with a Pineapple Dole Whip! However, if you have never heard of them, it is time you discovered this delicious treat! A pineapple dole whip is essentially like a pineapple frozen yogurt! 

INGREDIENTS
  • 2 cups Fresh pineapple, diced or 1 (20 oz) can diced pineapple, drained
  • 1/4 cup Unsweetened almond milk (or milk of choice)
  • 1 tsp Lemon juice
  • 2 tsp Lime juice
  • 1/4 cup Sweetener
METHOD
  1. The estimated total time to make this recipe is 1-5 Minutes.
  2. Open cans of pineapple, and drain liquid, (if using fresh, cut up fresh pineapple into small chunks).  Place chunks into a ziplock bag and freeze for at least 2 hours, or overnight. Let thaw slightly just before making. (Do this by leaving it out on the counter for about 15 minutes, or microwave for about 30 seconds. You want to just be sure it is not rock solid frozen, so it can blend easily.)

Gumbo



Chicken Shrimp & Sausage Gumbo — a rich, flavorful gumbo with authentic flavors; loaded with chicken, sausage, shrimp and crab legs. Simply Delicious.

INGREDIENTS

  • ¼ cup canola oil
  • 8 oz . Smoked sausage
  • 2 pounds chicken skinless chicken thigh
  • ½ cup flour
  • ¼ cup unsalted butter
  • 1 medium green bell pepper diced
  • 1 medium onion diced
  • 1 cup chopped celery (about 3 sticks)
  • 2 teaspoons minced garlic
  • 1 14 oz . can tomatoes (chopped)
  • ½ pound crab legs
  • 1 tablespoon Creole seasoning.
  • ½ tablespoon smoked paprika
  • 1 tablespoon chicken bouillon powder or 1 cube
  • 1- tablespoon thyme fresh or dried
  • 2 bay leaves
  • 6 cups chicken stock (sub with water)
  • 1 pound shrimp (peeled and deveined)
  • ¼ cup chopped parsley
  • 2 green onions chopped
  • 1- tablespoon gumbo file
  • 10 cups cooked rice
INSTRUCTION
  1. Lightly season the chicken with salt and pepper. Heat the oil over medium heat in a heavy bottomed Dutch Cook the chicken until browned on both sides and remove. Add the sausage and cook until browned, and then remove. Set aside
  2. In a large Dutch oven or heavy bottomed saucepan combine melted butter, oil and flour until smooth.
  3. Cook on medium heat, stirring continuously, for about 20-30 minutes or until it turns a rich dark brown color - just like chocolate. Don’t walk away from the stove during this process. It might burn.

Crock Pot Taco Casserole

INGREDIENTS
  • 1 1/2 pounds hamburger browned
  • 2 cans Ro-Tel tomatoes and peppers
  • 10 3/4 oz cream of onion soup
  • 1 package dry taco seasoning mix
  • 1/4 cup water
  • 6 to rtillas cut into 1/2 inch strips
  • 1/2 cup sour cream
  • 1 cup cheddar cheese shredded
INSTRUCTION
  1. Combine beef, Ro-Tel, Cream of Onion soup, taco seasoning and water in crock pot
  2. Cut up tortillas and stir into mix
  3. Cover and cook on low 7-8 hours

Baked Lemon Pepper Wings



The lemon pepper chicken wings are seasoned with homemade lemon pepper seasoning and baked in the oven.

INGREDIENTS
  1. 4 lbs Chicken wings, tips removed and patted dry
  2. 4-5 Large lemons, zested
  3. 3 tbsp Extra virgin olive oil
  4. 1 tbsp Salt
  5. 1 tsp Black peppercorns, crushed
INSTRUCTION
  1. Position oven rack to center position and preheat oven to warm (lowest setting).  Line a large rimmed baking sheet with parchment paper and set aside.
  2. To prepare the lemon-pepper seasoning, wash the lemons and pat dry. Remove zest from each lemon with a citrus zester.  A good zester will remove all the yellow and none of the bitter white layer.  Spread the zest in a thin layer on the parchment paper and place in the oven. After 20 minutes, remove pan from oven and shake to make sure zest is drying evenly. Return to oven until thoroughly dried, approximately 25-30 minutes.  Remove dried lemon zest from the oven and increase oven temperature to 425°F.

Slow Cooker Honey Garlic Chicken

INGREDIENTS
  • 2 tablespoons lite soy sauce
  • 2 tablespoons ketchup

Mexican Pizza



Seasoned ground beef, enchilada sauce and cheese stuffed between two golden flour tortillas. These will be a hit with the whole family!

INGREDIENTS
  • 1 pound lean ground beef
  • 1 (1 ounce) packet taco seasoning
  • ½ cup water
  • 6 medium-size flour tortillas
  • 1 (16 ounce) can refried beans
  • 1 (16 ounce) can red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 tomato, diced
  • 1 green onion, diced
  • 1 small can sliced olives
INSTRUCTION
  1. Preheat oven to 375 degrees F. Take 2 baking sheets and spray them with non-stick spray. Place 3 tortillas on each baking sheet. Place in the oven and bake for 5 minutes, carefully flip tortillas over while they’re still in the oven (*don’t burn yourself please*) and then bake another 5 minutes to crisp on the other side. You want tortillas a slight golden color and crispy. Remove from oven and set aside.
  2. Meanwhile, cook the ground beef in a large skillet over medium-high heat. Drain grease. Add taco seasoning and water. Bring mixture to a boil, then reduce heat to medium-low. Stir and simmer for 10 minutes. Remove from heat.

INGREDIENTS
  • 1 tablespoon crushed red pepper
  • 1 tablespoon freshly cracked black pepper
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 tablespoon dried parsley
  • 1 1/2 teaspoon garlic powder
  • 1 1/2 teaspoon onion powder
  • 1/2 teaspoon dried rosemary
  • 1 1/2 teaspoon coarse sea salt
  • 3 cloves fresh crushed garlic
  • extra virgin olive oil
INSTRUCTION
  1. Combine crushed red pepper, black pepper, oregano, basil, parsley, garlic powder, onion powder, rosemary, sea salt and crush garlic. Mix well.
  2. If serving immediately, place dry spice mixture in a shallow plate. Drizzle desired amount of extra virgin olive oil over, serve. Wait to combine extra virgin olive oil and dry spices until right before serving.

ORANGE CREAMSICLE COCKTAIL



If you like the popsicle, you'll love this creamsicle drink! A delicious cocktail that'll be festive throughout all holiday seasons.

INGREDIENTS
  • 1 part vanilla vodka cold
  • 6 part orange soda
  • Reddi Wip
  • orange sugar sprinkles optional
INSTRUCTIONS
  1. If desired, fill a large glass with ice (but ice is not required.)
  2. Pour orange soda in glass, then add vanilla vodka. Spray whipped cream on top and decorate with orange sugar sprinkles.

Spinach Suesadillas (VEGAN)



Vegan spinach quesadillas which will make your mouth water! These easy to make quesadillas filled with eggplant, spinach, and vegan cheese are healthy, gluten-free and done in less than 30 minutes.

These spinach quesadillas are filled with eggplant (aubergine) and vegan cheese sauce. They are great for lunch, dinner or as a filling snack! The recipe is gluten-free, grain-free, dairy-free, and very easy to make.

INGREDIENTS
  • 4-6 tortillas (gluten-free if needed)
  • 1 medium-sized onion, chopped
  • 3 cloves of garlic, minced
  • 1 large (300 g) eggplant (aubergine) chopped into small cubes (max. 1 inch)
  • 6 oz (170 g) fresh spinach, roughly chopped
  • 1/2 tbsp oil
  • 4-5 tbsp red wine (or vegetable broth)
  • 1 tbsp soy sauce (gluten-free if needed) or coconut aminos
  • 1 tbsp balsamic vinegar
  • Spice mix: 2 tsp onion powder, 1 tsp paprika, 1/2 tsp cumin powder, 1/2 tsp (ground) oregano, 1/4 tsp smoked paprika, ground chipotle chili powder to taste)
  • Sea salt + pepper to taste
  • 1 batch vegan cheese sauce
INSTRUCTION

  2. Heat oil in a skillet, add onion and fry over medium heat for about 3 minutes.
  3. Add the eggplant, garlic, balsamic vinegar, soy sauce, red wine, all spices and cook over medium heat with a lid on for 12-15 minutes. Stir frequently. Make sure the eggplant is thoroughly cooked.
  4. Add spinach, stir, and cook for a further 30-60 seconds. Turn off the heat.

INGREDIENTS
For The Marinade:
  • 3 tablespoons vegetable oil
  • 2 tablespoons Worcestershire sauce
  • 3 cloves garlic minced
  • 2 tablespoons ground cumin
  • 2 tablespoons chili powder
  • 1 teaspoon smoky paprika
  • 1 tablespoon cilantro chopped
  • ½ teaspoon red pepper flakes
  • 2 teaspoons brown sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 jalapeno pepper seeds and rib removed, diced
  • Juice from 2 limes
For The Chicken & Vegetables:
  • 4 chicken breasts boneless/skinless
  • 4 bell peppers orange, red, yellow & green
  • 2 sweet yellow onions peeled, halved & sliced stem-to-root end
  • 4 tablespoons canola oil divided
  • 2 tablespoons unsalted butter divided
  • 8 Flour tortillas 6-8 inch, warmed slightly
For The Queso Cheese Dip:
  • 1 cup Queso Cheese Dip homemade or store bought.
For Sides & Topping (Optional):
  • Mexican Rice
  • Refried Beans
  • Freshly chopped cilantro
  • Sliced jalapenos
  • Pico de Gallo
  • Sour Cream
  • Greek Yogurt

INSTRUCTIONS
For The Marinade:
  1. Whisk all marinade ingredients in a medium bowl.
  2. Pour half of the marinade into a gallon sized zip lock plastic bag and add the chicken breasts. Be sure all the chicken is covered with marinade. Seal the bag.
  3. Add the vegetables to another gallon sized zip lock plastic bag and pour the remaining half of the marinade over the vegetables. Seal the bag and squeeze the marinade around the vegetables to cover completely.
